Vanilla Cake with Chocolate Ganache (Gluten-Free)

  • 680g Versatile Vanilla Cake Mix (Gluten Free)
  • 250ml (1 cup) Oil
  • 250ml (1 cup) Milk
  • 4 XL eggs

This gluten-free vanilla cake with chocolate ganache is the perfect treat for any occasion. Methods

  • Preheat the oven to 180degC.  Grease 24cm Spring release tin
  • Beat eggs on high until pale and frothy.
  • Fold in the flour and liquids, a little at a time, with a whisk
  • Pour into cake tin and bake for 40 minutes or until done.
  • Allow to cool.

  • Break 175g of chocolate into small pieces and put into a heat proof bowl with 125ml of cream.
  • Melt either on the stove where the bowl is placed into a pot of water, or place the bowl in the microwave.  Heat gently, stirring regularly, until  melted and smooth.
  • Allow to cool, but pour over the cake before it is hardened.
  • Enjoy on its own or serve with whipped cream.
