Methods
Preheat the oven to 200°C
Mix wet ingredients in a bowl.
Add the wet ingredients to the dry ingredients and whisk. Do not overmix.
Pour into a small greased loaf tin (20×9 cm)
Bake at 200 °C for 25 – 30minutes.

Ingredients: Rice Flour, Bicarbonate of Soda, Sugar, Salt, Crème of Tartar, Xanthan Gum
600g makes 2 loaves
Takes 5 minutes to mix and 30 minutes to bake
To the mix add eggs, oil and water
For muffins follow the recipe but put into muffin tin
For the vegan option, replace the eggs.
Slice and freeze for another time, or make savoury muffins
It’s plain, so add your own flavour – nuts and seeds, fruits, cheeses, pesto or relish.
