Method
Preheat the oven to 200°C
Mix wet ingredients in a bowl.
Add the wet ingredients to the dry ingredients and whisk. Do not overmix.
Pour into a small greased loaf tin (20×9 cm)
Bake at 200 °C for 25 – 30minutes.
My son cannot eat eggs. What can I replace the eggs with?
Leave out the egg, and replace it with 120ml water or milk. It works well. Bear in mind this is high in Glycaemic Index, its pure carbohydrate without the egg, so add some things to the batter to reduce the GI – nutssuch as almonds and crushed seeds, feta cheese. Its also an option to add chopped apple or banana, sultanas gogi berries and other things to make it interesting. Let me know how it works out for you.
