Entice Gluten Free White Bread

Ingredients

500ml (2 Cups)

  Entice Self Raising Self Binding Rice Flour

15 ml(1 Tbs)

  Sugar

3 ml (1/2 tsp)

  Salt

2

  Eggs

330ml(1 1/3 cup)

  Milk or Rice Milk

60 ml (4 Tbs)

  Oil

Optional Extras for Added Nutrition and Fiber

3T

  Mixed Seeds, crushed

80ml (1/3 cup)

  Psyllium Husk

 

   

 

Method

Preheat the oven to 200°C

Mix Dry ingredients in a bowl.

Mix wet ingredients in a bowl.

Add the wet ingredients to the dry ingredients and whisk.  Do not overmix.

Pour into a small greased loaf tin (20×9 cm)

Bake at 200 °C for 25 – 30minutes.

    This looks similar to the recipe on the side of the Rice Flour package. What is the reason the above recipe wasn’t chosen to be included on the package?

      Hi Karen

      The recipes are similar. The packaging was printed before the recipe was changed. I have to print a huge amount of packaging at a time, so I will change the recipe at the next print.

    I have been using entice rice and self raising flour for some time now also using it in cup for cup recipes but my finished product (cherry cake , muffins , and a microwave Scottish dumpling –this is on the same lines as a boiled fruit cake (all of these end up very crumbly and do not slice ) what am I doing wrong.

    Try to increase your mixing time on batters that are thick. Thin batters should be handled as little as possible so as to prevent all the bubbles from being beaten out of the mix. Unfortunately with egg free recipes the end result is often more crumbly as the egg does help with the binding You could add a little more xanthan gum (available from health stores) to the flour to improve the binding
